2. Washing: Rinse raw materials with running water and rinse the residue and impurities on the apple.

3, peeled: raw materials by mechanical (can also artificial) uniform elimination of apple skin, remove the cracked, spotted parts.

4. Slicing: The peeled apple is punched into a circular hole along the center of the core by a nucleus machine, and then cut into a ring-shaped slice along the transverse direction of the fruit with a slicer.

5, syrup soaking: fruit pieces placed in syrup for 30 to 40 minutes. When soaking, the liquid level of the liquid medicine is higher than that of the fruit surface. In order to prevent the fruit pieces from floating on the top of the liquid medicine, it should be covered with a lid curtain weighted material to ensure that the fruit pieces are completely soaked in the liquid medicine.

6, drying: 1 drying room temperature: 60 ~ 80 °C. 2 Drying time: 5 to 10 hours. 3 Dehumidification: Always dehumidify during the drying process. 4 During the drying process, prevent the temperature from becoming unstable.

7. Selection of films: Dried apple stems have to be manually selected and trimmed. 1 Trimming: Trimming the fruit pieces with residual seeds, peels, mechanical scars, spots, pests and diseases. 2 Pick: Remove the water tablets (not dried), paste, chips, and dirty slices from the fruit pieces and remove impurities.

8, packaging: After testing, inspection of qualified dehydrated apples, into the composite bags, packaging. If vacuum packaging is used, the product shelf life can be extended.

(3) Preservation of Dried Apples

Dried apples need to be stored in dark, dry and cold places. The lower the storage temperature, the longer the storage period. The best temperature is 0~2°C, but generally it should not exceed 4~10°C. The drier the better the air, its relative humidity is preferably below 65%. Vacuum packaging can extend the shelf life of the product. In addition, pay attention to moisture and rain, prevent pests and rats biting. These are important preservation measures to ensure the quality of dried apples.
